The manufacturing of coconut powder is simple and well-established process. Natural matured quality coconuts with husk are stored for about a month to facilitate absorption of water and coconut kernels are separated from shell walls. After de-husking, their shells are removed and its brown skin is removed by scrapping it off. The de-shelled coconuts are broken into pieces, hot water blanching is Carried out and disintegrated in powder form. Desiccated Coconut is grated and is then dried (1% moisture content max) in tray drier at about 80-90°C and to ensure uniform drying this powder is stirred occasionally. On cooling, it is passed through vibratory screen with different mesh sizes to segregate the powder according to mesh size. Finally, it is packed in moisture and oil-proof polythene-lined plywood boxes. But on average 12-13 kgs of coconut powder is obtained by processing 100 coconuts.
